the edge of the drying deck, dangling your tired dogs, watching the
sunset and sipping a Corona.

The
raw beans are run through a one hundred year old pulper to knock their
skins off. They are then fermented overnight to further "cook" off the
pulp and develop flavor. Rinsing stops the fermentation, and the
resulting inner seed is spread out on a large open-air deck to dry.
Entirely
sun-drying coffee can be slow and tedious, with lots of raking and
turning involved, but you all know how important a genuine perfect tan
can be!
